Marinades as a connection
A technique as popular and well known as marinades contemplated by a chef with a commitment to product.
Marinades have been with us since the beginning of time, initially as a food preservation technique, and later as a cooking format to create different, special flavours.
Marinades form part of Vicky's gastronomic memory, and are the inspiration behind some of her recipes. Sevilla's talk will show us why she is fond of cooking marinated recipes, to give her creations a controlled acidity to balance out some flavours and intensify others in her menus.
